Ingredients

    1.5kgs Lean Minced Beef
    500g Lean Veal & Turkey Mince
    1 Large onion diced
    1 Tbsp Olive Oil
    2 Carrots Grated
    500g Pumpkin Grated
    2 Beef stock cubes
    400g Tin diced tomato
    1 Can concentrated Tomato Soup
    3 Cloves Garlic
    3 Tablespoons of Oregano
    1 Bunch flat leaf Parsley

Tips

Freezes well
Check seasoning towards end - if you prefer more tomato, add more; if lacking flavor, add another stock cube (adjust nutritional info as required).


Directions

1. Heat oil in stock pot, saute onion & garlic 2 minutes then add mince & brown (will take around 10 - 15 minutes).
2. Add balance of ingredients except parsley & bring to boil, then simmer for 2 - 3 hours, stirring occasionally. Mixture will reduce.
3. Add parsley
4. Eat
