Ingredients

    1. 3 links low-fat turkey sausage, cubed
    (approximately 40 grams protein total)
    2. 2 teaspoons olive oil
    3. 1 10-ounce can lentil soup (Health Valley or
    Amy’s Lentil Vegetable)
    4. 1 10-ounce can tomatoes (crushed or
    diced) or 1 cup fresh, chopped
    5. 1 10-ounce bag fresh spinach, chopped
    6. grated cheese (not in nutritional value)

Directions

In a medium saucepan place 2 teaspoons of olive oil and sauté the cubed low-fat turkey sausage until browned. Add lentil soup and tomatoes. When soup comes to a simmer add in chopped spinach. When spinach has wilted (just a few minutes) serve in soup bowls. Garnish with grated cheese
