This bread freezes great! It's wonderful without nuts too. This bread freezes great! It's wonderful without nuts too.
Number of Servings: 16


    2/3 cup sugar
    1/3 cup unsalted butter, room temperature
    2 eggs
    3 Tbsp buttermilk, lowfat
    1 cup bananas, mashed (about 2 medium and very ripe)
    2 cups flour
    1/2 tsp baking soda
    1 tsp baking powder
    1/2 tsp salt
    1/2 cup chopped nuts (optional) this is not added into the nutrition as I usually make it without nuts


Mix sugar, butter and eggs.
Stir in buttermilk and bananas.
Sift flour, baking soda, baking powder and salt. Add to other mixture.
Mix in chopped nuts, if desired.

Pour into well greased loaf pan (9x5).
Let stand 20 minutes before baking.
Bake at 350 degrees F for 50-60 minutes.
Let cool in pan for 10 minutes then place on wire rack to cool more.
Serve warm or cool completely before freezing. Label with date.
