    1/2 medium yellow onion
    1 Tb butter
    1 c skim milk
    1 Tb flour
    1 tsp granulated garlic
    1/2 tsp italian seasoning
    3/4 c shredded cheddar cheese
    1.5 - 2 c gluten-free corn pasta


1. Cook pasta according to package directions. Set aside.
2. Heat butter in saucepan over medium-high heat. Add onions. Sweat until nearly-transluscent.
3. Add seasonings and flour. Stir flour constantly until lightly browned.
4. Whisk in milk. Break up flour with whisk.
5. When milk comes to temp, add cheese. Season with salt and pepper to taste.
6. Use whisk to stir cheese until melted and sauce is creamy.
7. Add cooked pasta. Stir well and serve.
