Ingredients

    Canned petite diced tomatoes
    Juice of one lime
    1 tsp adobo all purpose seasoning salt or salt and pepper
    1/4 cup chopped cilantro
    1 chopped and seeded chipotle in adobo
    1 tbsp apple cider vinegar
    2 small or 1 large cloves garlic
    1 medium chopped yellow onion
    1 tsp ground cumin

Tips

If you don't like onions so much but still want the salsa you can sautee the onions before adding them.

Besides eating this plain, with tortilla chips I also use it as a sauce base. I add 1/4 to 1/2 a cup of it to a can of refried beans for burrito filling. Add a few tablespoons to an avacado for guacamole, etc.


Directions

Blend garlic and cilantro together first in your chopper, pluse six or seven times to mince the garlic. Add apple cider vinegar and chiptole and mix for a few seconds. Add all other ingredients and blend until you've reached your desired thickness. Season to taste, you can try adding ancho chili powder as well.
