Introduction

Taking a typical cheese cake and making a lighter version into individual cupcakes to help monitor helping size. Taking a typical cheese cake and making a lighter version into individual cupcakes to help monitor helping size.
Number of Servings: 12

Ingredients

    12 low fat vanilla wafers
    2 - 8 oz packages of 1/3 less fat cream cheese
    1/2 cup sugar
    2 eggs
    1/2 tsp of vanilla
    1 can of Comstock Sugar Free Cherry Pie Filling

Tips

Bake until center is almost set.
One can also add 1 TBS of lemon juice and a dash of salt for another variation . Still use the vanilla.


Directions

Place Low fat vanilla wafers in the bottom of muffin tin or cupcake paper liner
Beat 2- 8 oz packages of softened cream cheese until fluffy
Add:
2 eggs
1/2 cup sugar
1/2 teaspoon of vanilla
Mix with mixer until blended
Spoon cream cheese mixture over vanilla wafer and
top with a spoonful of Cherry Pie filling .
bake on 350 degrees for 30-to 45 minutes until done.

Serving Size: Makes 12 cupcakes
