Number of Servings: 4


    1/4 c chopped scallion
    1 tbsp curry powder
    1 tsp paprika
    1 tsp tumeric
    dash salt
    dash cayenne
    1 whole tomato, chopped
    1/2 c. water

    2 oz. mozzarella


Saute above ingredients for about 5 minutes, add corn, stir and allow to saute about 7 minutes, add spinach, cover for about 1 min. Turn off heat. Cut mozzarella in small cubes and lightly mix in to spinach mixture.

Serving Size: makes 3 1.5 cup servings
