Ingredients

    1 lb. extra lean ground beef
    1 medium onion, chopped
    1 1/2 c. Minute Rice (uncooked)
    1 cup salsa (I used Ortega original mild)
    1 11 oz can of Mexicorn
    2 cans (14.5 oz) Hunt's petite diced tomatoes
    1 can peas, drained
    1 cup water

Directions

Brown hamburger with chopped onion. Add 1 cup water with all ingredients except peas. Bring to boil. Cook 2 mins. Add peas. Cover and cook for another 3-5 mins. Let stand 5 mins. and serve.
