Number of Servings: 30


    Vanilla Wafers, 12 oz
    Semisweet chocolate, 1 cup chips (6 oz package)
    *Margarine, 70% vegetable oil spread, 8 tbsp
    Low fat cream cheese, 4 tbsp
    *Smuckers Sugar Free Jelly-Strawberry, 15 tbsp


To cut fat, use a lower fat margarine and/or cream cheese
You can use any flavor jelly or jam.
You can also replace the jelly with fresh fruit instead.


Melt margarine and crush up wafers. Mix together and set aside.

Small sauce pan melt cream cheese and chocolate together on low heat, stirring continuously. Remove from heat.

Line a cupcake pan with cupcake papers. Press wafer mix into bottom of each paper to form a crust. Cover each crust with a layer of chocolate mix. Put in freezer for about 10 minutes or until chocolate is slightly hardened. Top each "tart" with half a tablespoon of jelly. Place back in the freezer until fully hardened.

Serving Size: Makes 30 cupcake bottom servings
