Introduction

Ingredients

1 cup quinoa, rinsed and cooked in 2 cups water
2 cups fresh or frozen chopped green beans
1 cup cherry or grape tomatoes, cut in half
1 can pinto beans, drained and rinsed
1/2 cup Red or Spanish onion, chopped
3 garlic cloves, mince
3TBSP fresh basil, chopped (or 1 TBSN dried)
1 cup celery with leaves, chopped
1/2 cup chopped onion
1 lemon, juiced
2 TBSP olive oil
Salt, (I used Real Salt, a natural pink sea salt)
Fresh ground pepper
Tips
Adding the ingredients warm helps the quinoa absorb the flavors.
Directions
Pour 2 cups water in a small covered saucepan. Bring to a boil. Add rinsed quinoa and stir. Reduce heat to a simmer and replace lid. Simmer for 11-12 minutes, or until water is absorbed.
While quinoa is cooking, cook your green beans separately until al dente.
Pour your lemon juice and olive oil into a large bowl. Add all your herbs and garlic; mix well. Add your cooked quinoa, cooked and drained green beans, drained pinto bean, and the chopped vegetables; mix well. Add salt and fresh pepper to taste. Ready to serve, or chill and serve.
Serving Size: approx. 8 1-cup servings
