Ingredients

8 oz. pasta
2C Arugula
1 1/2 C Chicken Broth
1T All-Purpose Flour
2T Extra Virgin Olive Oil
4 Cloves of Garlic, minced
1 19 oz. can of White Beans, rinsed
2T Balsamic Vinegar
1/4t salt
1/4t pepper
1/2 C Shredded Parmesan Cheese
2/3 C Whole Wheat Breadcrumbs
Directions
Cook Pasta.
Whisk together broth and flour until smooth. Heat oil over medium-high heat. Add garlic to oil and cook for 30 seconds. Add broth mixture to the garlic, bring to a simmer, whisk until mixture thickens (3-4 minutes).
Add beans, vinegar, salt, and pepper to pasta. Cook one minute. Toss pasta mixture in sauce.
Top with cheese, breadcrumbs, and fresh arugula.
Serving Size: 4 servings, 1 1/2 Cup each
