Ingredients

    1 package of Pillsbury thin crust pizza dough
    1 cup of artichoke hearts
    5 medium red peppers, chopped and roasted
    1 1/2 cups of mushrooms, cooked and drained
    3 cups fresh spinach
    2/3 cup of mozzarella cheese
    1/4 onion, chopped

Directions

Preheat oven to 375.

Line a baking sheet with foil and spray with nonstick cooking spray.

Turn out the dough onto a lightly floured surface.

Spread the cheese, leaving a 1-inch border.

Add the other veggies.

Roll like a jelly roll and crimp the edges.

Bake for 20-25 minutes.
