    1/4 cup extra virgin olive oil
    1/4 cup sherry vinegar
    4 thin slices day old French bread, cupbed and lightly toasted
    2 cups cucumbers, peeled, seeded and diced
    4 cups tomatoes, peeled, seeded and coarsely chopped
    1 1/2 cup chopped red onion
    1 cup diced green pepper
    2 tsp finely minced jalepeno pepper
    2 large garlic cloves, peeled and mashed
    2 cups tomato juice
    4 Tbsp chopped fresh parsley
    salt and pepper


Process the soup in two batches in food processor, but not entirely smooth. You want some little chunks of vegetables. You can also process some of the veges and save some to use as garnish. Season to taste with salt and pepper.

Serving Size: 8 approx 1 cup servings
