    Lamb mince (lean), 17 1/2 oz (500 gram)
    Onions, raw, 1 cup, chopped
    Heinz Big Red Reduced Salt Tomato Soup, condensed, 14 oz (400 gram)
    Cottage Cheese 7 oz (200grams)
    Egg, large, 1
    Water 1/4 cup
    Eggplant, fresh, 1 3/4 pound (800 grams) sliced
    Oregano, ground, 1/2 tsp
    Garlic powder, 1/2 tsp
    Sunflower Oil, 1 tbsp


You can season the cottage cheese topping with herbs and spices if you wish


Heat oven to 350F (180C)

Spray 11" x 8" baking dish with canola spray.

Using the oil in the skillet, lightly brown, on both sides, the eggplant slices.

Brown the mince and onions, add the tomato soup and cook until slightly thickened.

Layer a third of the eggplant slices in the baking dish, place 1/2 of the sauce, then another third of the eggplant, finishing off with the last 1/2 of the sauce and the last third of the eggplant slices.

Beat the cottage cheese, egg and water together and pour over the top of the moussaka

Place into the oven and cook on a low fan for @30 - 45 minutes until the moussaka is bubbling and brown.

Divide into 8 portions and serve with a greek salad.
