    1 lb boneless, skinless chicken breast, cut into bite sized pieces
    5 c unsalted chicken stock
    2 tbsp garlic, chopped
    1/4 c olive oil
    1 c red bell peppers, chopped
    1 c onion, chopped
    1/3 c flour
    2.5 c tomatoes, chopped
    1 c frozen okra
    1 lb raw shrimp
    1 tsp tobasco sauce
    1 6-oz can tomato paste


Boil chicken with garlic in stock until chicken is cooked through.

Saute peppers and onion in olive oil. Add flour and brown. Add stock to roux.

Add tomatoes, okra and chicken and simmer 30 minutes.

Add shrimp, tobasco and tomato paste and simmer another 5 minutes.

Serve over brown rice.
