Ingredients

1 Tin of Crushed tomatoes
3 cloves of garlic
1 tbs oil
2 teaspoons basil pesto
2 tablespoons soy sour cream/sour cream/ cream
juice of half an orange/lemon/lime
Tips
Serve over pasta. Parmesan may be added for extra floavour.
Directions
Heat oil in a saucepan.
Crush garlic and add to oil, heating until brown.
Add tinned tomatoes and bring to slow boil.
Add pesto and sour cream.
Remove saucepan from heat and blend with a stick blender.
Return to low heat and add juice from lime, orange or lemon.
Serving Size: Makes enough for 6 - 8 pasta servings
