    1-3/4 lb. yellow onions, sliced lengthwise
    2 Tbsp unsalted butter
    1 tsp flour
    salt & pepper
    1/2 cup red wine
    4 cups low sodium beef broth
    1 bay leaf
    1 Tbsp fresh thyme leaves
    1 small slice baguette or french bread
    1/2 cup grated Swiss cheese, reduced fat
    1/4 cup grated parmesan


Melt butter in large pan and add onions. Cover and let "sweat" over low heat for 1 to 1-1/2 hours. Sprinkle in flour , stir, and cook 2 minutes. Add red wine to deglaze pan. Add stock, thyme, bay leaf, and salt & pepper to taste. Cover and simmer 10 minutes. Put soup in oven-safe bowls. Place baguette slice on top. Mix the cheeses, then divide over bowls. Broil about 2 minutes, until cheese melts.
