Introduction

Number of Servings: 4

Ingredients

    2 Chicken Breasts cut into small strips bone and skin removed
    1 cup of Green Bell Peppers in strips
    1 cup Raw Onions in strips
    1/4 cup lime juice
    1/4 cup unpacked Brown Sugar
    1 tbsp. Red Curry Powder
    2 tbsp. low sodium soy sauce
    1 tbsp. Olive Oil
    4 Whole Wheat Tortillas (fajita size)

    *Lime wedges

Directions

Mix the lime juice, brown sugar, soy sauce, and red curry in small bowl. Place Chicken into medium sized skillet over medium high heat. Pour lime juice mixture over chicken and cook until chicken is cooked through. While cooking chicken, put olive oil into a separate large skillet and heat to medium high heat- once heated place Bell peppers and Onion strips and cook until onions are soft and slightly carmelized.

Place tortillas on a paper towel, and cook in microwave for about 30 seconds.

Serve while warm. Use lime wedges to spritz over chicken.
