    1 cup peppers/onions
    1 tbsp extra virgin olive oil
    6 eggs
    4 slices of ultra thin swiss


Sautee peppers/onions in 1 tbsp olive oil
Once cooked, top with 6 whisked eggs
Cook on low and cover the pan
Once eggs are almost set, top with 4 slices of swiss until melted
Cut into four equal pieces for serving
