    3 medium yellow squashes
    4 tsp olive oil
    salt and pepper
    1 tbsp canola oil
    1 block extra firm tofu
    1 bunch green onions
    2 cloves garlic
    1 Anaheim pepper
    2 tsp coriander
    1 cup vegetable broth
    1 tbsp tahini
    1 tbsp corn starch dissolved in 1/2 cup water


1. Preheat oven to 400 degrees.
2. Cut squash lengthwise in half and scoop out seeds with a spoon.
3. Cut 1 squash into 1/3 inch cubes.
4. Place the other 2 squash halves in foil lined pan, sprinkle with 3 teaspoons olive oil, salt and pepper and roast for 20 minutes.
5. Heat a large skillet on medium high and add the sesame oil, tofu, green onions, and cubed squash. Saute for about 7 minutes until cooked through.
6. In saucepan heat the remaining olive oil on medium low, add the minced anaheim pepper and garlic, saute for 2 minutes. Add the Coriander, saute for another 30 seconds.
7. Add the broth and tahini, whisk till smooth. Add the cornstarch and whisk till thick and simmering.
8. Heap the mixture into the Roasted Squash
