    1 egg
    1/4 cup vegetable oil
    2/3 cup sugar
    1 egg
    1/2 cup orange juice
    1/2 cup water
    2 tbsp orange rind
    1 cup white flour
    1 cup whole wheat flour
    1 tsp baking powder
    1/2 tsp baking soda
    1/2 tsp salt
    3/4 cup dried cranberries


1. Preheat oven to 375.
2. Mix egg, oil and sugar. Add orange juice and water and mix.
3. Add flours, baking powder, baking soda and salt and mix until just mixed (don't overmix)
4. Fold in dried cranberries.
5. Put in paper muffin cups or spray non stick spray in muffin tins. Bake in 375 degree oven for 18-20 minutes. Cool on wire rack.

Serving Size: Makes 12 muffins
