Ingredients

5 tbsp unsweetened cocoa powder (I prefer mostly dark)
1 tbsp powdered xylitol (z-sweet powdered)
5 tbsp unsweetened non-dairy milk (I used Flax)
2 medium-sized, overripe bananas (slimy is a good thing!), mashed
1 cup brown xylitol (Ideal)
1 tsp vanilla extract
1 "slice" lite firm tofu (1/4 of a 12.3oz package), mashed
1/2 cup white whole wheat flour
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/3 cup raw oat bran (or your favorite type of soft nut, i.e. walnuts or pecans, for the chewiness factor)
Directions
Line a 8x8 baking pan with parchment paper. Preheat oven to 350F.
In a medium bowl, whisk together the cocoa, powdered xylitol and milk. Mash tofu and add to cocoa mixture. Mash bananas separately and blend in, along with brown xylitol and vanilla. Slowly add in flour, baking powder/soda, and salt. Fold in oat bran.
Pour into prepared pan and bake for approximately 40 minutes (a toothpick should come out still a little wet but the top should be firm).
Cool in pan for about 10 minutes before moving and cutting into squares.
