Ingredients

    40 oz skinless chicken tenderloins
    6 TB extra virgin olive oil
    1/2 cup bread crumbs
    1/2 cup pecans, toasted
    pepper
    garlic powder
    onion powder
    ground cumin
    ground black pepper
    chicken seasoning
    fresh herbs (oregano, basil, thyme)

Directions

Pound chicken breasts until thin
Heat olive oil in large pan
Grind bread crumbs, toasted pecans, seasonings, and fresh herbs
Lightly dredge chicken pieces in bread crumb mixture
Add to pan and cook 3-4 minutes on each side until browned.

Serving Size: 6 servings, about 3-4 cutlets per serving
