Introduction

This is something I threw together- I kind of made it up as I went along! Obviously, you can use more or less jalapeno to taste. If desired, you can also add salt. Ingredients

    5 Chicken Breasts with skin and bones (you can use boneless & skinless if you want; it does seem to affect the flavor though.)
    A few slices of onion
    2 cloves garlic, chopped or minced
    2 tsp chicken bouillon (I prefer Knorr brand)
    1 6 oz. can tomato paste
    2 jalapeno peppers
    I packet Sazon Goya (located in the Hispanic section in small boxes)
    1 tsp cumin

Tips

A little chopped cilantro put in towards the end really adds a pleasant zip to this dish.


Directions

Brown chicken in a little bit of oil; do not worry about cooking through completely.
Remove chicken from pan.
In same pan, saute garlic and onions until the onions are translucent.
Add all other ingredients and mix thoroughly. Lay chicken in even layer on the sauce. Add water until chicken is mostly covered.
Cover, and cook until chicken is cooked all the way through.
