Ingredients

    1 lb Chicken Breast, no skin (cut into pieces)
    1 cup chopped Broccoli
    1 cup chopped Carrots
    1 tbsp low sodium soy sauce
    2 tbsp Apricot preserve-Smuckers-Low sugar
    1 cup Campbell's low sodium chicken broth
    2 tbsp Apple Cider Vinegar
    1 tbsp Coconut Oil, 1 tbsp (remove)
    2 cups cooked Quoina
    1/2 cup Water chestnuts
    1/2 cup Edamame
    1 clove minced garlic
    2 tsp ginger

Directions

Cook quoina according to package.

Trim all visible fat from chicken and cut into small pieces. Mix together soy sauce, apricot preserves, and apple cider vinegar in small bowl, use as sauce (added at end of recipe). Heat coconut oil in large skillet, medium heat. Add chicken and cook until no longer pink on outside. Remove chicken, and add garlic and ginger to pan and stir until fragrant. Add broth and bring to boil, keep stirring. Add in broccoli, carrots, edamame, and water chestnuts. Cover and cook over low heat. When vegetables soft, add chicken. Add the sauce that was set aside. Once thoroughly cooked, remove from heat and serve over bed of quoina.
