    3 tbs olive oil
    2 lbs ground chicken
    2 tbs chili powder
    1/2 c onion
    2 tsp ground cumin
    14 oz stewed tomatoes
    1c frozen corn
    1 can black beans
    8 spinach flour tortilas
    2 1/2 c mexican cheese mix


serve with salsa/ sour cream


Brown chicken over 2 tbs of oil. Season with 2 tbs chili powder, onion and 2 tsp cumin.
Add tomato, drained beans and corn.
Heat 2-3 min.
Coat baking dish with 1 tbs oil and layer tortilas, mean/beans and cheese.
Bake 12-15 min at 425 (uncover for last 5).
