    6 medium apples
    2 Tbsp lemon juice
    1 c packed brown sugar
    2 Tbsp minute tapioca
    1/2 tsp ground cinnamon

    3 Phyllo pastry sheets
    canola cooking spray

    2 tsp white sugar
    1/4 tsp ground cinnamon


Cut apples into thin wedges, put in pan. Add lemon juice, brown sugar, tapioca & cinnamon. Stir & let stand 10 minutes then heat on low until sugar is dissolved & apples partially cooked. cool.

Lightly oil 1 side of each phyllo sheet. Center sheets on a 10 inch pie plate staggering them and letting them hang over the edge. Pour apple filling over sheets, fold overhanging sheets up and over the filling. Lightly spray top with oil, sprinkle with sugar & cinnamon. Bake at 350 degrees for 30 minutes until golden. cool
