Chicken salad with yogurt instead of mayo! Spiced up and crunched up with Jalapeno and Jicama. Chicken salad with yogurt instead of mayo! Spiced up and crunched up with Jalapeno and Jicama.
Number of Servings: 6

1 can, 10 oz, white chicken meat in water
1/2 C plain, fat free, Greek Yogurt
    1 C diced red/orange pepper
    1 C diced Jicama
    2 stalks celery diced
    1 tsp onion powder
    salt/pepper to taste

Keeps in the frig all week, I like to take the salad ingredients to work then mix them at lunch time. Keeps them all fresh and ready to go.

Mix all ingredients and chill for a bit. Add other spices to suit your taste, I like some red pepper flakes and a touch of garlic in mine. Change up veges as well, I like the zip of Jalapeno and the crunch of Jicama.

Use as a sandwich filling in whole wheat pita, add some tomato slices with a side of fruit makes a great lunch. Or serve on a bed of spinach and greens for a great salad. No dressing needed!! Add some chopped walnuts or almonds to bring up the protein and good fat but careful of the calorie hike!

Serving Size: Makes 6 generous 3/4 C servings

Number of Servings: 6
