    4 chicken breasts, skinless & boneless
    2 tablespoons olive oil
    1/4 c cider vinegar
    1/2 c orange marmelade
    Salt & pepper to taste


Sliced red bell pepper or hot chilis would be good added to the sauce before you add the chicken back into it.


In skillet, heat olive oil over medium heat.

Flatten chicken breasts then sprinkle lightly with salt & pepper. Cook in skillet until lightly browned on both sides. Remove from heat & cover.

Deglaze skillet with cider vinegar then stir in the marmelade. When it begins to bubble, add the chicken and any juices on the plate back to the skillet. Cook until completely heated through.

Serving Size: makes 4 servings of 1 chicken breast each
