Preheat oven to 350 degrees and have a 9 x 13" pan ready. Preheat oven to 350 degrees and have a 9 x 13" pan ready.
Number of Servings: 16


    2 cups flour
    1 1/4 cup sugar
    1 stick of butter
    1 tsp. baking powder
    1 cup vanilla soy milk
    2 eggs, separated
    1 pint of blueberries
    2 tsp. cinnamon


Combine flour and sugar in a bowl. Cut the butter in until crumbly. Remove 3/4 cup of mixture and set aside. Add soy milk and egg yolks to mixture and stir until mixed. Beat the egg whites until stiff and fold them into the batter. Pour into 9 x 13" pan. Sprinkle with blueberries, and then with cinnamon. Bake for 30 minutes at 350 degrees. Cut into 16 equal sized pieces.
