    1 cup diced potato
    1/2 cup diced celery
    1/2 cup diced bell pepper
    1 teaspoon olive oil


Spray pan with non-stick spray. Saute celery and bell pepper until soft. Add olive oil and potatoes. Saute until soft. Add salt, pepper and sage.
