Number of Servings: 6


    1 cup Brown rice (prepared according to package instructions)
    1 avocado
    1 Lemon, juiced
    1 green pepper, diced
    1/2 cup (about 4) green onions, diced
    3 cloves garlic, minced
    1 tbsp Extra Virgin Olive Oil


Can add cilantro to enhance flavor.


Cook rice according to package. While rice is cooking, dice the pepper, onion, and garlic. Put 1 tbsp of olive oil in saute pan and heat. Add garlic. Cook until fragrant. Add green peppers and onion. Saute lightly or until the colors are bright. Add rice. Mix well. Add lemon juice and diced avocado. Mix well. Enjoy!
