    4 medium sized, firm green tomatoes
    1 medium sized, white onion
    Healthy Way All Natural Canola Cooking Spray
    1/2 tbl spn Chili Powder
    1-2 tbl spns Onion Powder
    1-2 tbl spns Paprika
    1-2 tbl spns Basil
    1/2-1 tbl spn Cayenne
    1-2 tbl spns Garlic Powder
    2-3 Finely, crushed Bay leaves

    * Adjust seasonings according to taste, more for extra spicy zing.


1) Heat a 9 inch non-stick or caste iron skillet or wok over medium heat until drops of water dance and evaporate.

2.) While waiting for skillet to reaching proper temperature:
Place seasonings into a sandwich bag and shake to mix well.
Snip one corner of sandwich bag to create sprinkler.
Rinse, dry and slice tomatoes.
Peel, slice and separate onion into rings.

3.) Lightly, spray surface of pan with canola oil.

4.) Place a layer of tomatoe slices and onion rings into skillet.

5.) Sprinkling seasonings over the tops of tomatoes and onions.

6.) Turn tomatoes. (Turn up heat, if necessary to keep juices evaporating, or tomatoes will boil instead of being stirfryed.)

7.) Tomatoes are done when onions are slightly golden.

Delicious and nutricious when served with scrambled egg substitute and 3 strips of turkey bacon.
