    2-3 overripe bananas, mashed
    1 c whole wheat flour
    1 c white flour
    1 tsp cinnamon
    18 packets equal
    1/2 c 1% milk
    1/2 c water
    1 tsp salt
    1/4 tsp baking soda
    1 tsp baking powder
    1 egg
    1 tsp vanilla extract


In a large bowl mix together egg, sugar substitute, milk and vanilla extract. In another bowl mix together the dry ingredients. Slowly add in the dry ingredients into the egg mixture. Add in water as needed when the mixture becomes too thick. Add in banana and mix throughly. Fill muffin tin (either sprayed with Pam or paper liners) about 2/3 full of the mixture. Bake in a preheated oven at 350 degrees F for 45 min. or until a toothpick comes out clean when stuck in a muffin. Enjoy!
