    chicken about 1lb
    1 1/2 2 cups fat free, low sodium chicken broth, or water
    2 tsp dried mixed herbs
    1 bay leaf
    instant mashed potatoes
    10 ounces cream of chicken soup
    2 cups frozen mixed vegetables, thawed
    1 tablespoon chopped fresh thyme
    1 tablespoon chopped fresh rosemary
    1/2 teaspoon salt
    1/2 teaspoon freshly ground black pepper


You can substitute an equal amount of chicken gravy for the soup.


1. Poach chicken breasts in broth or water, herbs and bay leaf. Simmer for 15 minutes. Remove from liquid and dice once cooled.
2. Prepare mashed potatoes according to box directions.
3. Mix chicken, soup, herbs and vegetables. Season with salt & pepper to taste.
4. Top with mashed potatoes.
5. Bake at 350 until heated through, about 30 minutes.

  • Make this meal this weekend. Stays so good. Instead of using mashed potatoes, I used IDAHO potatoes, boil and season with cream cheese, & herbs and also I added green beans too. I also used creams of chicken and mushroom. - 2/22/16
