Ingredients

    1/2 cup cornmeal
    1 1/2 cup water

    1 1/4 cup 2% milk
    2 tbsp white vinegar
    2 cups white/ all-purpose flour
    1/8 cup brown sugar
    1/4 tsp salt
    1 tsp baking powder
    3/4 tsp baking soda
    1 egg
    2 tbsp olive oil

Directions

In a small pot, mix together cornmeal and water. Bring to a simmer, a gently cook for about 5 minutes

In a large measuring cup, combine milk and vinegar and let stand until milk is thick.

In a large mixing bowl, combine cornmeal and milk/vinegar mix. Separately, combine flour, sugar, salt, baking power and baking soda. Mix into cornmeal mix. Beat in egg and olive oil.

Drop pancake mix onto lightly greased griddle or frying pan by the 1/4 cup. Flip when the bubbles pop and the mix doesn't absorb the emtpy space.

Makes 15 pancakes about 5-6 inches in diameter.
