Ingredients

    .125 cup white flour is 2 Tablespoons

    .20 tsp Cinnamon is 1/8 of a teaspoon

    If making smaller muffins, place only 2 blueberries on top of each muffin prior to baking.

Directions

Preheat oven to 375 degrees F.

Spray muffin tin with Pam.

In a large bowl, mix together 1.5 c. flour, baking soda, baking powder and salt.

In another quite large bowl, beat together mashed bananas, sugar, slightly beaten egg and melted butter.

Stir the banana mixture into the flour mixture just until moistened.

Spoon batter into prepared muffin cups.

In a small bowl, mix together brown sugar, 2 tablespoons flour and 1/8 cinnamon.
Cut in 1 tablespoon butter until mixture resembles coarse cornmeal.
Sprinkle topping over muffins.

Put 3 blueberries on the tops of each muffin

Bake in preheated oven for approximately 20 minutes (until a toothpick inserted into center of a muffin comes out clean)


Serving Size: makes 7 large muffins or about 10 small muffins
