    5 TB oat fiber
    4 TB pecan meal
    1/2 tsp baking powder
    1/2 tsp baking soda
    2 packets splenda plus fiber
    2 large egg
    2 TB oil
    1/4 cup buttermilk


Mix wet ingredients, separately mix dry ingredients, then combine and stir well. Batter will be somewhat thick.

Either cook as you would a pancake, on a pancake griddle, or you can use to make puff pancakes, in a puff pancake pan, or put the bowl with the mix into the microwave and cook on high for 1 minute.

Serving Size:1 big pancake or 2 smaller ones. Recipe makes 2 servings.
