Ingredients

*Baked Potato, with skin, 4 medium (2-1/4" to 3-1/4" dia.)
Half and Half Cream, 6 tbsp
Goat Cheese, Soft, 4 oz
Parmesan Cheese, shredded, 8 tbsp
Chicken Breast, no skin, 2 breast, bone and skin removed
Milk, nonfat, .5 cup
Salt, Pepper, Garlic Powder, Paprika, herbs (to taste)
Tips
Have one for lunch or two for dinner. Serve with a healthy side salad or veggie.
Directions
Preheat oven to 375 degrees
Place potatoes in oven whole (45 minutes)
Bake Chicken (season with cooking spray, salt, pepper, garlic powder & Paprika) in dish for 35 minutes.
Cut potatoes in half lengthwise while chicken rests.
Scoop out the potatoes into a large bowl.
Mix in the rest of the ingredients except chicken. (Be sure to add salt, pepper, garlic powder and herbs you like to taste. The more flavoring from seasoning the less fat you need)
Cut chicken into small cubes or shred and add to potato mixture.
Fill skins with the mixture and bake until heated through.
Serving Size: Makes 8 stuffed potato halves
