    4 c. mushrooms sliced, use white, crimini, portobello or a mix
    1 c. chopped onion
    1 bay leaf
    1 tsp. olive oil
    1 tsp. tapioca flour
    1 c. almond milk
    1 c. chopped parsley or cilantro
    1 c. water
    salt and pepper to taste


Can be served over rice or pasta or eaten plain as a stew.


Put the oil in pan. Sweat the onion for a few minutes until softened. Add mushrooms and bay leaf, and cook over medium heat until mushrooms have released their water. Whisk the tapioca flour in a quarter cup of the water. Add to the pan. Add almond milk and rest of the water and lower the heat. Simmer until thickened. Remove the bay leaf. Add parsley or cilantro, and salt and pepper to taste.
