Ingredients

    12 oz ( 4 tilapia fillets)
    1 cup quinoa
    1 lemon
    1 cup lima beans (frozen is fine)
    1/2 cup raisins
    1 tbsp lemon pepper
    1 tbsp black pepper
    1 tbsp honey

Tips

Fresh squeezed lemon will add a natural zing to the quinoa, without adding unwanted calories.


Directions

Thaw out 12oz (about 4 fillets). Once thawed, foil line a baking sheet. Place fillets on baking sheet, and season with pepper and lemon pepper. Drizzle a small amount of honey on each fillet. Bake for about 25 minutes. While baking, prepare quinoa according to package. Sprinkle the peel from a fresh lemon into the pan with water and quinoa before cooking. Cook as indicated with lemon peel. Once cooked, squeeze half of the lemon juice into quinoa. Add cooked lima beans and raisins to quinoa. Serve with fish.
