As healthy-as-it-gets lettuce wraps! Smoked salmon with a zesty Mexican twist. This is a must-have lunch and dinner recipe that will leave you full and happy without any of the extra calories! Ingredients

-1 tbsp guacamole (home made or store bought)
-1 tbsp pico de gallo (home made or store bought)
-1 piece of salmon (home made or store bought) (cooked to your preference)
-1 large leaf of iceberg lettuce
-1 sliced lime
-3 sliced pineapple pieces
Tips
The nutrition facts are a bit off in this recipe. All of my ingredients were home made (excluding the salmon, of course) which is a lot healthier than some of the choices given. So, substitutes are welcome! This is an extremely simple (but yummy) recipe that can be easily changed.
Directions
1. Prepare salmon as desired (I smoked mine because it tends to taste better to me).
2. Tear one large leaf of iceberg lettuce and place on a plate (Should be bowl shaped to properly hold all ingredients).
3. Carefully spread 1 tbsp (Or more, if your a major guac lover) onto lettuce leaf. This will serve as the "glue" for your salmon.
4. Cut salmon to fit inside lettuce leaf.
5. Position salmon on top of guacamole inside lettuce leaf.
6. Sprinkle 1 tbsp (Or more, if you are a pico lover) on salmon.
7. Arrange three pieces of sliced pineapple on the side of your dish (This will bring out the sweet and zesty flavorings in your wrap).
8. Squeeze one sliced lime over everything (Might also add a dollop of sour cream to increase flavor).
9. Eat & enjoy! :-)
