Ingredients

Ingredients:
Chicken Breast, no skin, 2 breast, bone and skin removed (4 breast halves)
Celery, raw, 3 stalk, medium (7-1/2" - 8" long)
Onions, raw, .25 medium (2-1/2" dia)
*Claussen Sweet Pickle Relish, 4 tbsp
Hard Boiled Egg, 2 large
*Kraft miracle whip regular, 8 tbsp
Salt, to taste
Tips
For more flavorful chicken, use chicken broth instead of water. This can also be made with leftover chicken.
Directions
Poach Chicken:
Bring enough water (or chicken broth) to cover chicken to boil, place whole chicken breasts in water. Cover and remove from heat. Let stand apprx 20 minutes or until chicken is white all the way through.
Remove chicken from water and let cool 5-10 minutes.
Chop chicken or shred with fork, then place shredded chicken in large mixing bowl.
Chop celery, onion, and hard boiled egg, and add to chicken.
Add relish and Miracle Whip and mix all ingredients together.
Add salt and pepper to taste.
Serving Size: Makes 6-1/2 cup servings
