    4 tomatoes (4 oz each)
    2 oz smoked salmon pieces
    2 eggs
    1 egg white
    1 tbsp water
    1 tbsp fresh chives


Cut tomatoes in half and scoop out flesh and seeds. Chop flesh and place in strainer to allow excess liquid to drain away.

Cut the smoked salmon into small pieces. In separate bowl, beat eggs, egg white, and water together. Add pepper to taste. Heat a small pan and cook egg mixture for one minute, stirring. Stir in tomato and salmon and continue to cook for 3-4 minutes. Or until eggs reach desired consistency.

Preheat broiler and line with foil (I put them on cookie sheet for easier clean up). Place halved tomatoes on broiler and broil for two minutes. Fill tomatoes with egg mixture and sprinkle with chives.

Two tomato cups per person.
