Introduction

It's tomato season! I love home-grown tomatoes. (I wouldn't try this with store-bought tomatoes.) This recipe can be slimmed down by using a lower-calorie mayonnaise and less of it, lettuce instead of bread, smaller pieces of bread or something else. It's tomato season! Ingredients

    1 ripe tomato
    2 slices of whole-grain bread
    1 tbsp mayonnaise

Directions

Remove stem from tomato and slice it into 1/2-inch slices. Spread 1/2 of the mayonnaise on one slice of bread. Place sliced tomato on mayonnaise side of bread. Spread remaining 1/2 of the mayonnaise on the other slice of bread and place it mayonnaise-side down on the tomato. Cut the sandwich in half if desired and eat!

Serving Size: Makes 1 sandwich
