    Beet Greens, Raw, 5 cup
    1 tsp olive oil
    Ricotta Cheese, part skim milk, .25 cup
    Garlic, 3 cloves finely chopped
    Onions, raw, .5 cup, chopped
    Mushrooms, fresh, 1.5 cup, pieces or slices
    Red pepper flakes to taste
    Salt and pepper to taste

    Heat pan to medium heat, add olive oil, onions, garlic, a pinch of salt, black pepper, and red pepper flakes. Sautee for 1-2 minutes. Add chopped beet greens and sliced mushrooms. Cook for 5 minutes, until greens and wilted and mushrooms are slightly cooked (I like to maintain the shape and some texture of the mushrooms). Mix in ricotta cheese and serve.
