    3 cans chickpease
    2 cups chopped fresh broccoli
    2 cups grated carrots
    1 cup panko breadcrumbs
    1 cup vegetable broth
    1 large onion
    3 tablespoons olive oil

    optional: chives, herbs


Mash chickpeas with stock. Saute onions in olive oil. Mix broccoli, carrots, and cooked onions in with chickpeas and press into a casserole dish. Bake at 350 for 45 minutes covered, and then another 15 uncovered. FREAKIN' DELICIOUS.
