Introduction

A variation of Jamaican style rice and peas. A variation of Jamaican style rice and peas.
Number of Servings: 8

Ingredients

    1 cup quinoa
    1 cup pigeon peas
    1.5 tbsp coconut milk
    3 cloves of garlic
    1 scallion
    1 tbsp of butter
    2.5 cups water
    1 scotch bonnet pepper
    1 tsp Thyme

Directions

1. Cook peas according to instructions.
2. Once cooked add water, coconut milk, garlic, scallion butter, salt and thyme and simmer 10 minutes.
3. Rinse quinoa then stir into with pepper and bring to a boil.
4. Lower flame and allow quinoa to steam.

Serving Size: 1/4 cup
