    1 pound 93% lean ground beef
    1 can rotel tomatoes
    1 can Old El Paso fat free refried beans
    1 can Goya black beans (drained and rinsed)
    1 can Campbells healthy request cream of mushroom soup
    1/2 cup dry rice prepared as directed on package
    1 pack of taco seasoning
    8 oz velveeta shredded cheese


Serve with shredded lettuce and diced tomatoes, tostitos baked chips, salsa and fat free sour cream. Chips, salsa and sour cream are not calculated in the nutritional values for this recipe.


Prepare rice as directed. While rice is cooking brown ground beef in a large skillet then drain and rinse with HOT water. Return beef to skillet and over low heat, stir in the taco seasoning pack and mix it with the beef. Add rotel tomatoes, refried and black beans and cream of mushroom soup stirring to incorporate. Remove from heat and set aside until rice is done. When the rice is done stir in to the beef mixture and pour into a 13 x 9 baking dish then top with shredded Velveeta. Bake on 350, approximately 30 min until cheese is melted and casserole is bubbling.
