Number of Servings: 4

Ingredients

    1 1/2 - 2 pounds patty pan squash
    1/4 cup olive oil
    1/3 cup Panko bread crumbs
    1/3 cup grated Parmesan cheese
    1/2 teaspoon salt
    1/2 teaspoon pepper
    1/4 cup chopped fresh herbs... such as basil, parsley etc.

Directions

Preheat oven to 350.
Slice squash into 1/4 in thick rounds
Place in casserole dish...pour in olive oil. Put the lid on and shake to coat squash.

Put salt, pepper, Panko, Parmesan and chopped herbs in a bowl and mix.
Put 1/2 mixture into casserole and shake to coat squash. Put balance of mixture on top and put in oven for 30 minutes.

5 minutes before cooking is finished remove lid to brown.

Serving Size: makes 4 servings
